Organic Raw Nyons Olives 500 g

The olives of the “Tanche” variety are native to the Drome region which is near Nyons. They are one of the most sought-after olives in France with the highest quality. They are also called “la perle noire”, the black pearl of Nyons. They are a product of controlled organic cultivation and they are also in 100% raw quality, which results in a rare combination of pleasant delicate flavor and fresh consistency.

In contrast to the standard preparation methods used to remove the bitterness from the olives, such as pickling in salt/ salt varnish or using alkalis. These olives are subject to an entirely natural ripening process, without the use of any additives whatsoever.

The olives are individually harvested by hand in relatively late December-January during the advanced stage of ripeness. Immediately post-harvest, the olives are filled into jars and sealed airtight. This marks the beginning of the 6-month post- ripening period and the debittering process through which the olives naturally develop in their own ripening gas.

Before consumption, open the jar at least three to five times. The escape of the ripening gas can be heard clearly, likewise, the size of the olives increases slightly after opening. The fruit begins to “breathe” again and darkens in color to an intense black. In principle, they could be now consumed, but the natural fermentation and bitter substances still need a few days to completely break down. Thus, be patient and allow the olives time for their optimal quality taste. Once opened, the shelf life is between two and four weeks, depending on the temperature in which they’re stored. Additionally, the storage life of the olives can be prolonged by adding some cold-pressed olive oil.

Please note that these are still living fruits. That requires the correct handling, from harvest, to storage, to consumption which ensures a guaranteed full enjoyment of this noble delicacy.
