Coconut Cookies'n Cream Pie

Directions

Crust

So first you'll need to make the crust which is the easiest thing ever. Blend 400 grams of medjool dates with 100 grams of dried coconut flakes into a food processor and press the mixture into a 22cm springform pan.

Coconut Butter

The next task is to make coconut butter. This ingredient is rather expensive so making it yourself is a good idea. Not only does it cost a lot less, it requires no effort at all to make it.

Put 250 grams of shredded coconut in a food processor and leave it on for 10-20 minutes until it's totally liquidy. You might have to scrape the sides every few minutes.

Cream

Now add 600 grams of young coconut meat, 1/3 cup + 2 tablespoons of agave syrup, 3 tablespoons of Lifefood lucuma powder and about 1 1/2 teaspoons of vanilla bean powder. Mix that well and pour over the crust.
